Pinot Noir is a difficult grape to grow, as it requires much maintenance and care throughout the growing season. Winemakers the world over struggle with this varietal, but when done well it is amongst the richest and most complex wines the world over. A number of our vintages of Pinot Noir are award winners, making us a premium producer. Our select vineyard locations are also some of the oldest and most fertile in the region.
This Pinot Noir has been harvested from very low yielding vines, in order to enhance the elegant nature of the grape. The berries are sorted and whole pressed very gently. We then use a combination of new and mature oak to round out the palate and add additional structure. The nose is full of cherry, raspberry, earth tones and toasty oak. The mouth feel is complex and warm, with good texture. The tannins are silky and soft, making this an approachable wine in its youth.
Pinot Noir is a varietal that pairs well with food because it is not overstated. Meats such as game or rare cuts are perfect for the soft texture of this wine, though it also pairs beautifully with fish or light pasta dishes.

The Angels Step vineyard is an immaculate vineyard on the west side of the Beamsville Bench. Its 25 acres are sloped at a gradual step down that perfectly highlights everything that the bench is known for: slope, elevation, rich soil, excellent drainage and airflow.
This Pinot Noir is a very gentle but complex expression of the grape varietal. On the nose it has lots of cherry, earth, cedar and a bit of spice. The palate is medium to full with lots of raspberry and cherry. The acidity is really special giving this wine a refreshing note which would make it perfect for food.
The vinification includes more than 14 months in French oak barrels which offers excellent texture and softer tannins to the palate.

What is a GSM? Well, it could be a few different blends if you are in the wine know. Our example is an elegant blend of Gamay, Syrah and Merlot.
The unique combination of these three varietals brings something really special to the party. The Gamay provides a soft, refreshing and fresh red berry note. The Syrah brings structure to the palate as well as a bit of smoke and spice while the Merlot does what Merlot does best and provides a soft and velvety finish.
The GSM is part of our limited addition wines with a production of just 200 cases.

Cabernet Merlot is one of the world’s most common blends. It is typically a blend of one or both of the Cabernet grapes as well as Merlot. In our example we are using Cabernet Franc and Merlot. The Cabernet creates the skeletal structure of the wine, while the Merlot offers elegance. From a winemaker perspective this type of blend is exciting to make, as it is often done solely by nose. Each varietal is monitored and tasted regularly, to allow the fruit to express itself. When the individual wines are close to maturity the winemaker begins selection of specific barrels and proportions for the blend based on the final style of wine that is required. This process takes several months to complete.
The final wine is truly a robust blend of these classic varietals. When the wine is freshly opened it shows aromas of cherry, fig and cedar. Once it has had time to breath, it demonstrates characters of red currant, blackberry, earth and cigar box, followed by subtle undertones of stewed fruits, mulling spices and green peppercorn. The palate is warm with good structure, yet not overwhelming in tannins, followed by a dry finish.
Cabernet Merlot is best served with fine cuts of meat or full flavoured fish. It may also be paired with rich pasta dishes and aged cheeses.
